It takes three days to make the La Maison du Chocolat truffle by hand, a veritable chocolate-making legend revisited with a light touch.
Nicolas Cloiseau, Chef at La Maison du Chocolat and Meilleur Ouvrier de France Chocolatier, appropriates the mythical codes of this emblematic foamed ganache, which he tinges with chocolate emotions. Under his expertise, the truffle is revealed in a texture that is both frothy and melting, dressed in a fine layer of chocolate and delicately coated with cocoa.
Plain, flavored and Fine Champagne chocolates
It all begins with the creation of a frothy ganache, followed by a delicate coating of a fine chocolate and cocoa couverture. The mass, smooth and silky at first, crystallizes on our chocolate marbles, revealing a frothy, melt-in-the-mouth truffle. Next, the beater incorporates air, giving the truffle a soft, light texture. Next, they are enveloped in a veil of chocolate, forming a fine, dark shell that is crisp and delicious. Finally, they are sublimated by immersion in bitter cocoa powder.

Notre savoir-faire, croquant et moelleux
Rencontre de deux savoir-faire, chez Maison du Chocolat le macaron est affaire de talents. Chocolatiers et pâtissiers réunis mettent en scène l’intemporel travail de la ganache, texture emblématique de la Maison.
C’est en 2006, et pour la première fois à Paris dans l’univers feutré du macaron, que La Maison du Chocolat créé une collection entièrement dédiée de macarons à la ganache, baptisée initialement « cœur de ganache », déclinant une multitude de parfums : chocolat nature, chocolat framboise, chocolat vanille, chocolat café, chocolat caramel… La recette ? Depuis une meringue française choisie pour son craquant, les coques de macarons gagnent en texture au fil d’une cuisson plus longue qu’à l’accoutumée.
Au sortir du four, elles sont pochées de ganache et assemblées une à une, délicatement et toujours à la main, puis délicatement assorties dans nos coffrets Macarons.
