A worthy heir to the subtleties of ganache, the chocolate tart redefines this iconic dessert. The apparent simplicity of its sleek look conceals a much more complex character, including contrasting textures, chocolate at its most exalted and a perfect balance of flavors. It is reinventing chocolate tarts as a genre, having been designed using a crispy cocoa case, with a pure origin Grenadian dark chocolate (65%) ganache and a pure origin chocolate (80%) sponge, all topped off with a thin leaf of cocoa nib chocolate. We love its roundness and long finish, as well as the creaminess of a ganache which offers a beautiful complement to an inimitable chocolate flavor.
Take the Tarte out of the fridge 15 minutes before serving, at room temperature.
The apparent simplicity of the chocolate tart rests on getting just the right balance between the intense pure origin Grenadian dark chocolate (65%) ganache and the pure origin chocolate (80%) sponge. Each makes up half of the filling, their textures contrasting with the crispy cocoa tart case. The tart’s decoration emphasizes its absolutely indulgent chocolatey feel as its thin, crunchy chocolate leaf covered with cocoa nibs snaps on the palate.
