This first edition showcases the subtle nuances of a dark ganache with oyster extract, concentrating its iodized notes in a skillful blend of cream and mascarpone. The 66% dark chocolate achieves a surprising balance of naturally salty marine notes followed by a good taste of oyster and chocolate. To explore your tastes, and to captivate all those who love to be amazed.
Our chocolates are best appreciated at room temperature. We advise that you cut your chocolate in two and let it melt in the mouth to allow time for the flavors to develop. When you are tasting several chocolates, it is best to start with a plain chocolate, then move on to flavored varieties: first those with fruits, then spices, then alcohol.
Nicolas Cloiseau invites the marine wave of this unique chocolate to open our taste buds to new sensations. For Insolite Oyster, his reflection did not start from taste but from the process: the idea being to focus on all the raw materials that can be rehydrated or infused in the cream of a ganache, ground/crushed in praline, or substituted for butter or cream. Then, the famous "neither too much, nor too little," which signs the house's taste balance between chocolate and other ingredients, makes the chocolate vibrate like never before.
