Know-how and fine craftsmanship

Praline is one of the House signature flavors marked by a very pronounced taste of cooked caramel coating notes of intense dried fruits. In his mixture of fruit, covering and inclusion, Robert Linxe liked to push the cooking of the caramel, his only idea: to reduce the sugar as much as possible to retain only the taste of the fruit. The praline finds its balance between the dried fruits and the right cooking of the sugar. It is on a delicate variation in temperature of 16 then 21 degrees that everything depends. A technique where only experience allows you to detect the ultimate moment of taste, just before the dreaded pungency.
