Those who follow him know: Nicolas Cloiseau wakes up every day to shake up conventions. His recipe is to do nothing like everyone else: chocolates without cream or butter that highlight the house's DNA (Naturally Fruit), water-based ganaches (Bali Noël 2024), chocolates aged in oak barrels, alcohol-free*, with an intense whisky flavor (Alchimie), chocolates that come to the table (Esprit salé) in savory vegetable versions or others that are enjoyed frozen (Givrés). When it comes to innovation, our chef sets no limits, each innovation disrupts genres and makes a splash.
For Insolite, his reflection did not start from taste but from the process: Nicolas's idea was to explore all raw materials that can be rehydrated or infused into a ganache cream, ground/crushed into praline, or substitute for butter or cream. From this premise, everything becomes possible, pushing the boundaries of taste even with seemingly dissonant combinations. Then the famous "neither too much nor too little," which marks the balance of the house's taste between chocolate and other ingredients, makes the chocolate resonate like never before.
