From one extreme to the other, he navigates the contours of ever-moving geometric chocolate, a compass rose guiding his travel diary and inviting us to take a stroll deep in a winter wonderland.

Inspiration travels on a breeze. With a compass rose as his only guide, Nicolas Cloiseau sought inspiration in the depths of his travels, revealing chocolate in all its guises in an effect of perpetual movement.
The beauty of the world on one side, a taste of Balinese paradise on the other: conceived as an ingenious interplay of mirrors and pendulums, his journey takes us on a timeless chocolate escapade. A tribute to departures, the unknown and know-how, his "Christmas walking in the air" experience lures the senses into high-octane chocolate pleasure.
A one-off artistic creation by Nicolas Cloiseau, produced in a dozen limited editions, entirely handmade by our artisan chocolatiers and requiring a week's work. A faceted compass rose suspended at the heart of an intricate and ornate circular chocolate disc pivoting within a chocolate hoop. The design is embellished with 2,550 perforations and decorated with 80 stars spread over this piece’s 5.4 kg of chocolate (68% pure Bali dark chocolate, 37% milk chocolate and 33% Ivoire chocolate).

Rushing in from across all horizons, Nicolas Cloiseau's compass rose invents a whole new destination.
Deep within a Christmas wonderland, a wind of walnut praline with vanilla and lace brittle swirls around the contrasts: we love this melt-in-the-mouth texture shot through with flashes of walnut, biscuity notes of crisp lace brittle, milky walnut softened with vanilla, the dark and white interlacing of crunchy chocolate. Try as you might, it's impossible not to melt for this particularly gourmet edition designed to whisk your taste buds far, far away.

Rare, precious nuggets tucked away in the heart of the tropics, where cacao flourishes in the shade of coconut, clove, mangosteen and durian trees.
In his quest for the new and quirky, Nicolas Cloiseau has outdone himself in unearthing this stunning cacao (winner of the 2023 Cacao of Excellence award) that embodies the unusual taste of this pure Bali chocolate in a 68% dark ganache, replacing the cream in his ganache with water to release more of the chocolate's flavour.
The chocolate is supple, melting and rounded, lingering on the palate with hints of slightly acidic tropical fruits laced with cacao. And just like that, Bali becomes synonymous with chocolate.
