Nicolas Cloiseau, Chef of La Maison du Chocolat and Meilleur Ouvrier de France Chocolatier, reveals to us the day and night of the chocolate planet in a perpetual motion effect. On one side, the beauty of the world; on the other, the taste of a Bali paradise. His journey, designed in an ingenious play of mirrors and balance, takes us on a timeless chocolate escape. An ode to departure, the unknown, and craftsmanship, his creation Christmas walking in the air invites us to escape into the vastness of chocolate pleasure.
Our chocolates are best appreciated at room temperature. We advise that you cut your chocolate in two and let it melt in the mouth to allow time for the flavors to develop. When you are tasting several chocolates, it is best to start with a plain chocolate, then move on to flavored varieties: first those with fruits, then spices, then alcohol.
Christmas walking in the air is a unique artistic piece, limited to around ten copies worldwide, entirely handmade in our workshops, requiring one week of work by our chocolatiers. A faceted wind rose is suspended at the heart of a finely crafted circular chocolate disc, rotating within a chocolate arch. The entire piece is perforated with 2,550 holes and decorated with 80 stars, distributed across the 5.4 kg of chocolate (68% pure origin Bali dark chocolate, 37% milk chocolate, and 33% ivory chocolate) that make up the creation.
