The Compass Rose Christmas Buche is the epitome of elegance and complexity. This creation by Nicolas Cloiseau, Chef of La Maison du Chocolat and Meilleur Ouvrier de France Chocolatier, features a 68% dark chocolate mousse of pure Bali origin, accompanied by a gluten-free walnut paste biscuit with Périgord walnut pieces. The delicately caramelized walnuts are paired with a 46% milk chocolate cream and a vanilla walnut cream, topped with a vanilla walnut praline with Périgord walnut pieces. All of this rests on a base of layered dark and white chocolate, crowned with a milk chocolate tablet sprinkled with walnut powder, vanilla, and adorned with crushed and caramelized walnuts. The decoration is enhanced by a dark chocolate compass rose.
