Our chocolates are best appreciated at room temperature. We advise that you cut your chocolate in two and let it melt in the mouth to allow time for the flavors to develop. When you are tasting several chocolates, it is best to start with a plain chocolate, then move on to flavored varieties: first those with fruits, then spices, then alcohol.
Savoring the magic of chocolate at Christmas also means celebrating exceptional ingredients. The Balinese cooperative Kerta Semaya Samaniya, winner of the 2023 Cacao d'excellence Silver Award, grows its cocoa in the Jembrana region in the west of the island. In his pursuit of the extraordinary, Nicolas Cloiseau encapsulates the distinctive taste of this pure origin in a dark ganache where water replaces the cream to further release the chocolate's aromas. The chocolate is supple, melting, round and long on the palate, with hints of slightly acidic, cocoa-scented yellow fruit. And all of a sudden, Bali becomes a natural chocolate destination.
