This year, Nicolas Cloiseau* went to the islands to source the chocolate for his galette.

It was in Bali that he found exactly what he was looking for: tropical gardens where cocoa grows in the shade of other exotic plantations. A flavorful treasure with fruity chocolate notes, unlike any other, perfectly paired with the surrounding fruits. Well then, why not create an exotic twist on the chocolate galette? Nicolas Cloiseau’s Royal Pineapple King Cake fills our taste buds with a delightful blend of almond-chocolate, juicy pineapple, and coconut. The almond cream, enriched with grated coconut and coconut purée pastry cream, brightens a tender ganache made with intense dark chocolate from Bali (68%), enhanced with a touch of 100% cocoa.

Chocolate Almonde King Cake reinvents the traditional frangipane with a unique twist by Nicolas Cloiseau. This bold and original recipe introduces a subtle blend: almond cream combined with a creamy ganache. The perfect pairing of almonds and 66% dark chocolate creates a delightful sensation. The intense aromas of the chocolate, enriched with almond notes, unfold into a smooth, velvety texture. All of this is encased in a homemade, slightly caramelized puff pastry, golden to perfection.
