BÛCHE CARACAS 

Dark chocolate mousse with milk chocolate crémeux, salted chocolate streusel, and cocoa-almond biscuit.

 

A strong chocolate start, with pure origin Dominican Republic 64% mousse, highlighted by cocoa-almond biscuit. A milk chocolate crémeux, pure origin Dominican cocoa 46%, softens the tasting and brings gourmandise and silkiness to the bûche, with its cocoa taste and cereal notes. A slight sweet taste is brought by the thin layer of caramel crémeux, that protects the biscuit from moisture. Then a salted chocolate streusel ends the tasting.

BÛCHE MARACUJA

Dark chocolate mousse with mango-passionfruit ganache, passionfruit crémeux, and grated coconut biscuit.

 

A powerful chocolate start, dark chocolate 64% with notes of tropical fruit. Quickly picked up by a tangy passionfruit chocolate ganache with sweet mango puree. These sensations are softened by a light chocolate biscuit and a silky passionfruit crémeux. The tasting ends with a grated coconut biscuit, very airy and gourmand with rice flour and almond powder.

BÛCHE FIGARO

Almond-hazelnut mousse with chocolate hazelnut praliné, almond-hazelnut crémeux, and chocolate dacquoise biscuit.

 

The start is led by the hazelnut mousse, very tasty and slightly sweet. Followed by a crunchy almond-hazelnut praliné with a touch of salt, lying on an airy bed of chocolate dacquoise biscuit (meringue and almond powder). The tasting then goes on with a silky almond-hazelnut cocoa praline crémeux and ends with another layer of chocolate dacquoise biscuit.
